Scallops with Lemony green sauce

Scallops with Lemony green sauce

Ingredients

Main ingredients

  • 12 large and clean scallops,
  • 40ml of olive oil,
  • salt and pepper.

For the lemony green sauce

  • ½ lemon with its skin
  • 1 shallot
  • 1 clove of garlic
  • salt and pepper
  • 100 ml of olive oil
  • 10 ml of lemon juice
  • some sprigs of chive
  • a sprig of cilantro

How do you cook scallops?

You can cook scallops in their own shell. Open them very carefully, remove the intestines and rinse with their shell in cold water. Sprinkle with oil, salt and pepper, place them shell down on the FISH GRILL.

IN THE KITCHEN

  1. For the lemony green sauce: Wash the lemon, remove its seeds and slice finely. Mix the lemon with the chopped shallot and garlic. Add salt and pepper and leave to rest for 5 minutes. Add the olive oil and the chopped herbs. Finally add the lemon juice, salt and pepper and mix them together. Set aside.
  2. Place the scallops in a bowl, add salt and pepper ad springle the oil until they are well impregnated.

ON THE BARBECUE

Place the FISH GRILL on the barbecue grill and pre-heat to 500ºF. Place the scallops on the FISH GRILL with the flat side down. Cook for about 2 minutes on each side. Serve covered with the green sauce.
